Michel Roux Jr served up roasted carrot hummus with dukkah and vegetables for a vegetable garden starter in a flower pot on Hidden Restaurants.
The ingredients for the hummus include: carrots, chickpeas, tahini sauce, fresh coriander, frest mint, garlic, cumin, chilli flakes, lemon juice, lemon zest, salt and pepper for seasoning.
For the Egyptian dukkah spice mix: almonds, pistachio nuts, sesame seeds, cumin and coriander.
For the vegetables: carrots, sugar snaps, radish and celery.
