Gino D’Acampo served up toad in the hole with Italian sausages, fresh rosemary, caramelised red onions, red wine and cranberries gravy on This Morning.
The ingredients are: 5 tbsp sunflower oil, 8 good quality Italian sausages, 3 red onions, each cut into 8 wedges, 1 tbsp fresh rosemary leaves, stripped from the stalks, 250g plain flour½ tsp salt, 4 eggs, lightly beaten, 300ml full fat milk, salt and freshly ground black pepper.
For the red wine and cranberries gravy with caramelised onions: 1 large red onion, peeled and finely sliced, 3 tbsp rosemary leaves, 3 tbsp olive oil, 1 tsp salt, 500ml red wine, 1 tbsp runny honey, 400ml hot chicken stock, made with 1 stock cube, 2 tbsp balsamic vinegar, 1 ½ tsp corn flour, 1 tbsp cranberries jelly and Salt and freshly ground black pepper.
