Nigel Slater brings the taste of ginger to his Nigel’s 12 Taste Of Christmas cooking program.
Nigel has always loved a good ginger biscuit, but now he has come up with a new recipe that spices up the old formulae that makes for a very special ginger biscuit at Christmas.
Nigel makes his biscuit by putting 80g of light muscovado sugar in a food processor bowl with 70g of butter. He then creams the mix until it is dark and fluffy.
He breaks open a few cardamom pods and crushes the seeds finely.
He adds 2 table spoons of treacle followed by 250 grams of plan flour, a little bicarbonate of soda, cinnamon and ginger into a bowl.
He sieves the mix into a bowl before adding it to the butter and muscovado bowl. He then adds the yolk of an egg followed by the grounded cardamom.
He pours in a couple of tablespoons of milk and then brings it all together to form a dough.
He rolls the dough out on a floured surface to the thickness of a biscuit, then cut into shapes.
He bakes the biscuits in the oven for 12-15 minutes at 180C.
To finish, Nigel combine the icing sugar and lemon juice in a bowl until smooth. He then iced the biscuits from a height to get a random pattern.
