James Tanner served up creamy Thai mussels for a mid week super on today’s episode of Lorraine.
The ingredients are: 1kg scrubbed and debearded mussels, Olive oil for frying, 2 shallots, sliced, 1-2 red chilli, chopped (depending on how hot you like it), 2 cloves garlic, minced, 1 tbsp fresh ginger, 1 small stick lemongrass, chopped, Zest of 1 small lime, 1 can coconut milk, Pinch of salt, Handful picked coriander and Crusty bread to serve (optional).
