The Hairy Bikers vegetarian chestnut mushroom pie recipe

The Hairy Bikers vegetarian mushroom with chestnut pie is a warming comfort food made with chestnuts, mushrooms and Marsala wine.

The ingredients for the pastry are: 350g plain flour, 200g butter, chilled, pinch salt, 1 free-range egg yolk and chilled water.

For the filling: 50g butter, 2 leeks, sliced, 350g mushrooms (such as chestnut or button mushrooms), 2 garlic cloves, sliced, large sprig thyme, leaves only, 15g dried mushrooms (optional), soaked in 150ml freshly boiled water, 50g plain flour, 1 tsp Dijon mustard, 100ml Marsala, 200–300ml vegetable or chicken stock (amount depending on whether or not you are using dried mushrooms), 200g vacuum-packed chestnuts, left whole.
