Andrea Waters vegan pulled pork with jackfruit bap proved a tasty treat on Sunday Brunch.
The ingredients are: 3 Tbsp rice bran oil, 2 red onions finely diced, 3 garlic cloves peeled and crushed, 2 Tbsp smoked paprika, 2 Tbsp ground sumac, 3 stalks or fronds of fresh thyme, 1 cinnamon stick, 1 tsp mustard powder, ½ tsp ground black pepper, 300ml vegetable stock, 3 tbsp cider vinegar, 3 tbsp tamari (gluten free soy), 1 large dried ancho chillies, ripped in half to release flavour and 2 tins of young green jackfruit in brine (not in syrup).
