Andrea Waters vegan chia and buckwheat pancakes with aubergine bacon proved a real treat on Sunday Brunch.
The ingredients are: 260 g (2 cups) buckwheat flour, 1 tsp baking powder, 1 tsp bicarbonate soda, 2 chia seed eggs, 4 Tbsp brown coconut sugar, 400 mls nut milk –we like almond, 1 tsp lemon juice and Coconut oil for frying.
For the topping: maple syrup, bananas, aubergine bacon (*see recipe), roasted pecans.
