Nigel Barden served up a delicious chocolate suggestive lemon cheesecake on Radio 2 Drivetime with Simon Mayo.
The ingredients for the base are: 200g wholemeal biscuits, finely ground (Nigel used dark chocolate digestives) and 50g softened unsalted butter and a little extra for greasing.
For the filling: 250g soft cream cheese (Nigel used Philadelphia), 3 tbsp caster sugar, 1 tsp vanilla essence, Juice and rind of ½ lemon, 2 egg yolks, beaten, 12g / 1 sachet powdered gelatine (Nigel used Dr Oetker), 3 egg whites, 285ml double cream, whipped
For decoration: Plain chocolate.
