Si and Dave served up gnudi with arrabiata sauce on The Hairy Bikers Comfort Food.
The duo says: “Gnudi are a type of gnocchi made with ricotta and a sprinkling of Parmesan for flavour. They need to be left in the fridge for at least eight hours before cooking.”
The ingredients are: 300g ricotta, drained, 50g Parmesan, finely grated, freshly grated nutmeg, salt, to taste, about 250g semolina, for dusting, olive oil, for drizzing.
For the sauce: 2 tbsp olive oil, 2 garlic cloves, very finely chopped or crushed, 1 tsp dried chilli flakes, 500g fresh tomatoes, peeled and puréed (or tinned equivalent), pinch sugar (optional), handful basil leaves, salt and freshly ground black pepper.
To serve: grated Parmesan and basil leaves.
