Levi roots served up a tasty spicy mackerel hot pot on today’s episode of Lorraine.
The ingredients are: 2 whole mackerel, gutted, or 4 fillets, Juice of 1 lime, 6-7 medium chunky potatoes (waxy rather than floury but not too small), Water, as needed, ½ tsp ground allspice, Salt and freshly cracked black pepper, 3 tbsp sunflower or groundnut oil, 1 red onion, coarsely chopped, 1 pepper, (colour of your choice) deseeded and sliced, 2 tomatoes, seeded and coarsely chopped, 2 cloves garlic, finely chopped, 1 hot red chilli, seeded and finely chopped, 3 fresh thyme sprigs, leaves picked, 1 tbsp coarsely chopped fresh coriander and lime wedges, as needed.
