John Bishop and Jamie Oliver served up a tasty vegetarian lasagne using John’s wife and friend Jane’s recipe on Jamie and Jimmy’s Friday Night Feast.
The ingredients are: 2 onion squash , (850g in total), olive oil, 1 teaspoon fennel seeds, dried chilli flakes , optional, 60 g Parmesan cheese, 100 g Cheddar cheese, 100 g baby spinach, 350 g fresh lasagne sheets and 100 g ripe mixed-colour cherry tomatoes.
For the white sauce: 20 g dried porcini, 4 cloves of garlic, 250 g mixed mushrooms, 1 sprig of fresh rosemary, 2 sprigs of fresh thyme, 500 ml crème fraîche and 50 g Parmesan cheese.
For the veg ragu: 2 onions, 2 carrots, 2 sticks of celery, a few sprigs each of fresh thyme, rosemary, sage, 2 fresh bay leaves, 100 ml Barolo, 2 x 400 g tins of quality plum tomatoes, 2 x 400 g tins of beans , such as cannellini, borlotti, haricot and 1 large aubergine.
For the pesto: 1 big bunch of fresh basil , (60g), a few sprigs each of fresh soft herbs, such as mint, oregano, parsley, 100 g Parmesan cheese, ½ a clove of garlic, 100 g pine nuts, almonds, walnuts, extra virgin olive oil and ½ a lemon.
