Phil Vickery served up a delicious Christmas chocolate orange and meringue roulade his Morning’s Get Prepped For Christmas Day.
The ingredients are: Melted butter for buttering the tray, 3 medium eggs, 125g caster sugar, finely grated zest of 1 large orange, 175g chestnut puree, 15g arrowroot, 15g good quality cocoa powder, 1 tsp mixed spice, 1 pinch cream of tartar and 40g caster sugar for the meringue.
For the filling: 284mls lightly whipped double cream, 2 tbsp level cocoa powder, 6 tbsp level, icing sugar and 2 large meringues, roughly broken into small pieces.
To decorate: 75g extra bitter chocolate, melted.
