On this week’s Nigel and Adam’s Farm Kitchen, Nigel gave Adam a hand on the Cotswolds farm to gather in the harvest of wheat to produce the flour he needs for his simple bread loaf.
To make his loaf, Nigel use the flour made by at Shipton Mill in the Cotswolds from the wheat harvested.
The mill at Shipton Wood has been producing flour since the time of the Domesday Book. Today it produces a wide variety of Speciality Flours, using both traditional grain and traditional methods.
Nigel mix the flour with yeast, salt and water then make into a dough and left in a warm place for an hour.
After the loaf has rested, it is punched a little to release the air, then placed in a baking tin and left in a warm place once again until it rises to fill the tin.
Nigel then bakes the bread in a hot oven for half an hour.
