Nisha Katona served up a tasty sweet ‘n’ smoky pumpkin curry on today’s episode of Lorraine.
The ingredients are: Equivalent of half a butternut squash/pumpkin, peeled and cut into 1 inch cubes, 1 tsp cumin seed, 1/2 tsp turmeric, Pinch chilli powder, Salt to taste, 1/2 tsp brown sugar, 1 medium onion finely sliced, Juice 1/2 lemon, 3 tbsp vegetable oil, Water to loosen, 1/2 cup salted roasted cashews, Pomegranate seeds to garnish, 1 cup basmati white rice, 2 cups water, 1 cup spinach puree or even shredded spinach leaf we can throw in towards end of boil.
