Vivek Singh served up tasty poories with pumpkin pickle, spiced puff chicken and pastry patties for Diwali on Radio 2 Drivetime with Simon Mayo.
The ingredients for the puff chicken and pastry patties are:
4 tbsp vegetable oil, 2 inch piece of cinnamon, 12-15 curry leaves, 3 medium red onions, thinly sliced, 1 tbsp ginger-garlic paste, 1/2 tsp ground turmeric, 2 tsp red chilli powder, 11/2 tsp salt. 1 inch piece of ginger, peeled and finely chopped, 2 green chillies, stalk removed and finely chopped, 1 tsp Garam Masala, 450 g Chicken thighs, cooked & shredded (or leftover roast chicken), 1 tsp Peppercorns, coarsely cracked, Juice of 1 lime, 1 roll Puff Pastry Sheet, 1 egg for brushing and Fennel seeds to sprinkle.
For the poories: 500g plain flour or chapatti flour (or half and half), 2 tsp salt, 1 tbsp ghee or oil, 1 tsp sugar, 1 tsp ajwain seeds, 1 tsp kalonji or black onion seeds, 250 ml water, 2 tbsp oil, for rolling and 1 litre corn or vegetable oil to fry.
