Si and Dave served up a tasty chicken meatloaf with salad dish on Saturday Kitchen.
The ingredients for the meatloaf are: 1 tbsp olive oil, 1 small onion, finely chopped, 2 garlic cloves, crushed or grated, 750g minced chicken, 50g bacon, finely chopped, 1 tsp ground oregano, 1 tsp lemon zest, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 50ml double cream, 100g breadcrumbs, 2 free-range egg whites, 100g gruyère, grated and 5 slices of rindless streaky bacon.
For the glaze: 100ml ketchup, 1 tsp Worcestershire sauce, 1 tbsp Dijon mustard, 1 tbsp maple syrup and 1 tbsp cider vinegar.
