Paul was joined in his kitchen today by Rachel Allen. Rachel is a well know Irish chef, writer and presenter.
Rachel takes over the master baker’s kitchen to make her own children’s favourite raspberry and coconut pudding.
To make her pudding Rachael melts butter in a pan on the hub, and while it is melting spreads raspberry jam to cover the bottom of the baking tray.
She then mixes flour, sugar, baking powder and coconut in a bowl. In a separate bowl, she whisk eggs, vanilla extract and milk together, then pours the mixture into the flour mix.
She pours in the butter then mixed the content of the bowl. Once mixed she pours the mixture into the baking tray over the jam.
The tray is then put into the oven for 35 to 40 minutes and at 180 degrees. To finish, Rachel dust the sponge with icing sugar.
