Paul hit the road at 05:30 in the morning to visit a classic British truck stop on the M4 motorway to research is next dish, a bacon and egg pie.
He spent the morning with the canteen staff at the truckers stop café and experimented with two pies to see what the staff and customers would make of them.
He first created his bake beans, sausages, fired onions, brown source, topped with cheese and puff pastry pie. For his second pie, Paul used hash browns, scrambled eggs, black pudding, and bacon and finished off with pastry.
The pies were both baked in the oven for 15 minutes.
The verdict for the staff and customers alike after the taste test were all very positive, with the sausage and beans pie being the clear favourite. This was enough to give the master baker the inspiration to return to his kitchen and create his very special beacon and eggs pie.
Paul invited two of the ladies from the café to his kitchen to sample is delicious savoury breakfast pie made with cream cheese, eggs, dice pork and streaky beacon, making the most of the winning partnership between egg and pork.
Paul baked is pie at 200 degree centigrades for 30 minutes.
