On today’s Paul Hollywood Pies and Puds, Paul visits Whitehaven in Cumbria to discovery the origins of a real historic British treat, the Cumberland rum Nicky.
The Cumberland rum Nicky is a tart that has its origins on the high seas of British colonial past. Like many local recipes it contains surprisingly exotic ingredients which date from Whitehaven’s involvement in the slave trade, when boats would return from their journeys laden with sugar, rum and spices.
Paul searched the town of Whitehaven to see if he could locate a baker who is currently making cumberland run nicky, but unfortunately the master baker drew a blank. But undeterred by his failed mission, Paul returned to his kitchen where he baked his version of this historic treat.
Paul recommends that it is served warm with a little rum butter on the side, but we think it is a desert crying out for lashes of custard.
