Peppermint and chocolate Roulade is one of Paul’s favourite childhood treats and today he showed how to make it on Paul Hollywood’s Pies and Puds.
For his roulade Paul went in search of the best peppermint he could find anywhere in the country by paying a visit to Summerdown Farm in Hampshire.
Summerdown is a major supplier of top quality peppermint called Black Mitcham, and this is the mint that Paul used to make his delicious roulade.
Black Mitcham mint was reintroduced to the UK by Sir Michael Coleman from Coleman’s Mustard, after he tasted a sweet brought back from America by mint expert Ian Mergretts.
The oil from the plant is used by Sir Michael to make a variety of mint products including sweets, fragrance and tea.
Both Ian and Sir Michael joined Paul in his kitchen to watch the master baker produce his very special Peppermint and chocolate Roulade.
