Paul Hollywood Pies and Puds: Cobnut, pear and sticky toffee tart recipe

One of Paul Hollywood’s most interesting treats on the first episode of his new food show, Paul Hollywood Pies and Puds, was his Cobnut, pear and sticky toffee tart.

The main ingredient in Paul’s recipe is the Kentish Cobnut. The Cobnut was first farmed commercially by the Victorians who planted a large number of cob nut orchards, called plats, resulting in some 7000 acres being grown by the turn of the century.

The predominant nut grown was the Kentish cobnut, a type of cultivated hazelnut that is a larger nut than a hazelnut and has a different and distinctive flavour of its own.

The Victorians considered the Kentish cobnuts a form of delicacy and would eat them as an accompaniment to after dinner port.

Crunchy and sweet, the Kentish Cobnut partner apples and pears perfectly, which is the inspiration behind Paul’s autumnal, nutty, treacly tart.
