Paul Hollywood kicked of his new daytime food series- Paul Hollywood Pies and Puds – with a delicious looking Gypsy tart.
Gypsy Tart was created in Kent: the story being a lady wanted to feed gypsy children that played in the fields near her home and all she had was a pie crust, evaporated milk and sugar.
Although most will know the version of gypsy tart made with evaporated milk, it can also be made with condensed milk in place of evaporated milk. This makes a firmer and even sweeter tart, with a darker colour.
However, Paul use both types of milk in his version of the tart with Muscovado sugar that lends a rich caramel flavour to this unique, very sweet tart. It is served with a little crème fraîche or plain yoghurt to balance the sweetness.
