Singer Kelis served up a deep fried tasty cassava and prawns alcapurrias French dish on This Morning.

The ingredients for the cassava coating: 2 cassava roots, peeled and grated on a box greater using the fine grater, 2 tablespoons Sofrito,1 tablespoon Sazón or 1 teaspoon achiote paste plus 1 tablespoon sea salt, crumbled with your fingers and ½ teaspoon black pepper.

For the prawn filling: 2 tablespoon olive oil, ½ large white onion, very finely chopped, 1 teaspoon sea salt, 6 garlic cloves very finely chopped minced, ½ green and ½ red pepper, cored, deseeded and very finely chopped, 60g Sofrito, 1 teaspoon dried oregano, ½ teaspoon ground cumin, ½ teaspoon black pepper , ½ tea spoon cayenne pepper, ½ teaspoon achiote paste, crumbled with your fingers, 600g raw prawns, peeled, deveined and finely chopped, Rapeseed or vegetable oil for deep frying and 125g plain flour.
