The Hemsley Sisters Beef Ragu with chicken livers recipe on Eating Well with Hemsley and Hemsley

The Hemsley sisters served up a tasty beef ragu with chicken livers and courgetti on Eating Well with Hemsley and Hemsley.

The ingredients are: 2 tbsp ghee or butter, 2 onions, finely chopped, 2 garlic cloves, finely chopped, 2 dried bay leaves, ¼ tsp mixed spice (or try a tiny pinch of nutmeg), 2 tsp dried oregano, 400g beef mince (chuck or braising steak – not lean meat), 100g chicken livers, trimmed and chopped, 250ml red wine, 14 large tomatoes, roughly chopped (approx. 1 kilo) , or 2 x 400g tins Chopped tomatoes or 800g tomato passata, 2 tsp tomato purée, 200ml bone broth or water (you won’t need much if using tinned tomatoes), 2 large carrots, finely grated, Sea salt and freshly ground black pepper, 1 large handful fresh parsley, finely chopped, 4 large courgettes, Knob of butter, Extra virgin olive oil, to serve and 100g parmesan, grated, to serve.
