Dean Edwards served up tasty Barbeque chicken enchiladas on today’s episode of Lorraine.
The ingredients: Oil, for frying, 2 large chicken breasts, sliced, 1 large onion, diced, 3 cloves garlic, crushed, 1 green pepper, sliced, 1 red pepper, sliced, 400g can kidney beans, drained, ½ tsp smoked paprika, 1 tsp ground cumin, 100ml barbecue sauce, 100ml chicken stock, 8 small or 4 large soft flour tortillas, 500ml carton tomato passata, 150g Cheddar cheese, grated and Sour cream and fresh coriander leaves, to serve.
