Mary Berry salmon and herb coulibiac recipe on Mary Berry’s Foolproof Cooking

Mary Berry served up a tasty Russian salmon and herb coulibiac dish on Mary Berry’s Foolproof Cooking.

Mary says: “This dish is perfect party food, and great for feeding a crowd. The crisp filo pastry and flavoursome rice make this coulibiac lighter than the traditional Russian dish.”

The ingredients are: 500g salmon fillet, skinned, 175g long-grain rice, 75g butter, plus extra for greasing, 2 onions, roughly chopped, 2 garlic cloves, crushed, 1 small fresh red chilli, deseeded and finely chopped, 200g button mushrooms, sliced, ½ large lemon, zest and juice only, 2 tbsp chopped fresh parsley, 1 tbsp chopped fresh chives, 6 sheets (each 25x45cm) filo pastry, salt and freshly ground black pepper and watercress sprigs, to serve (optional).

For the sauce: 300g natural Greek yoghurt, 1 small bunch fresh parsley, chopped, 1 tbsp chopped fresh chives and ½ large lemon, juice only.
