John Whaite served up tasty piri piri chicken with rainbow ‘slaw on today’s episode of Lorraine.
The ingredients for the chicken are: ½ lemon, juice and zest (serve the rest as wedges), 1 tbsp tomato purée, 3 tbsp finely chopped fresh coriander, 10 mint leaves, finely chopped, 3 garlic cloves, minced, 1 fat red chilli, finely chopped, 1 tsp ground coriander, 1 tsp ground paprika, ½ tsp tabasco sauce, 1 tsp tomato ketchup, ½ tsp each salt and pepper and 8 skinless and boneless chicken thighs, trimmed of excess fat.
For the slaw: 1/8 red cabbage, finely shredded, 1/8 white/green cabbage, finely shredded, 2 carrots, coarsely grated, 3 tbsp low fat mayonnaise and Salt and pepper.
To serve: Leaves from 1 large iceberg lettuce.
