Phil Vickery’s tasty veggie potato curry takeaway recipe on This Morning

Phil Vickery served up a tasty veggie potato curry takeaway with pancakes on This Morning.

The ingredients are: 2 tbsp any oil, 1 small onion very finely chopped, 2 tbsp fresh ginger finely chopped, 4 cloves garlic, finely chopped, ½ tsp dried chilli flakes, ½ tsp ground turmeric, 600g 3cm cubed potato, 1 medium leek finely sliced, 3 tbsp tamarind juice, 1 vegetable stock cube, crumbled, 150mls cold water, roughly depending on the size of the pan, 2 tbsp chopped fresh coriander and 2 tbsp chopped fresh mint leaves.

To serve: 4 tbsp natural thick yoghurt and 2 tbsp fresh chopped coriander.

For the chickpea pancakes – makes 8 small pancakes: 150g gram flour, A pinch of xanthan gum, ½ tsp gluten free baking powder, 2 tbsp fresh coriander chopped, water to bind, Salt and pepper and 2 tbsp any oil.
