James Martin served up a tasty chicken liver pate with brandy, Bramley apple and walnut chutney for the festive season on Home Comforts at Christmas.
The ingredients for the chicken liver pate are: 250g chilled butter, plus extra for greasing, 500g chicken livers, cleaned, 1 tbsp fresh marjoram or thyme leaves, 5 tbsp brandy, 75g ghee or clarified butter, 8 slices white bread, crusts removed, salt and freshly ground black pepper.
For the apple and walnut chutney: 200g light soft brown sugar, 2 shallots, finely chopped, 90g dried apricots, finely chopped, 300ml cider vinegar, 450g Bramley apples, peeled, cored and roughly chopped, 1 tsp ground cinnamon, 1 pinch ground cloves and 125g walnut halves, roughly chopped.
