James Martin served up a delicious delice of fruit dessert with Italian meringue and berries for a New Year’s treat on Home Comforts at Christmas.
James says: “This beautiful dessert is perfect for parties because it can be made in advance and requires no baking. Serve chilled.”
The ingredients for the jelly are: 200g frozen blackcurrants, 100g frozen blackberries, 75g caster sugar, 2 tbsp crème de cassis, 3 gelatine leaves, soaked in cold water until softened, then drained.
For the blackcurrant mousse: 500g frozen mixed berries, 3 tbsp crème de cassis, 4 gelatine leaves, soaked in cold water until softened, then drained, 150g caster sugar, 2 free-range egg whites, 300ml double cream, 23cm ready-made sponge flan case, 2 ripe figs, cut into quarters, small handful fresh raspberries and small handful fresh mint sprigs.
