Hemsley Sisters Healthy Summer Fried Chicken recipe on This Morning

Sisters Jasmine and Melissa Hemsley served up Pablo’s chicken, summer lime coleslaw and ketchup, for a healthy summer fried chicken dish on This Morning.

The ingredients are: 180g ground almonds, 2 eggs, 6 chicken drumsticks, 1 tbsp olive oil or ghee and Sea salt and freshly ground black pepper.

For the spice mix: 3 tsp hot smoked paprika or 2 ½ tsp smoked sweet paprika with ½ tsp cayenne pepper, 1 ½ tsp ground cumin, 1 ½ tsp sea salt, 1 tsp dried thyme, 1 tsp dried oregano, ¾ tsp onion powder (optional) and ¾ tsp garlic powder (optional).

For the summer lime coleslaw: ½ large red cabbage, approximately 400g, 1 small fennel bulb with fresh fronds (delicate leaves), 2 medium carrots, julienned or sliced into matchsticks, 1 celery stick, finely sliced, 2 spring onions, sliced, a handful of fresh coriander, roughly chopped and 2 tbsp peanuts, almonds or pumpkin seeds.

For the lime dressing: Grated zest and juice of 1 unwaxed lime or lemon, 1 ½ tbsp. sesame oil or extra virgin olive oil and sea salt and freshly ground black pepper.

For the ketchup: 1 large onion, chopped, 1 tbsp butter, 2 garlic cloves, diced, 1 bay leaf, 7 tbsp apple cider vinegar, 700ml passata or ½ kg fresh tomatoes, roughly chopped, 7 tbsp maple syrup and a pinch of sea salt.
