John Whaite made a delicious blackberry and ginger crumble cake for a summer treat on today’s episode of Lorraine.
The ingredients are: 225g unsalted butter, at room temperature, 225g caster sugar, 4 large eggs, 225g self-raising flour, 2tsp ground ginger, 1tsp mixed spice, Pinch of salt and 225g blackberries, roughly chopped.
For the crumble topping: 150g plain flour, 125g unsalted butter and 125g light brown muscovado sugar.
