Steffi showcased her spätzle German noodles and cheese with speck sauce dish on Nigel Slater: Eating Together.

The ingredients are: 400g plain flour, plus extra for dusting, pinch salt, 4 free-range eggs, beaten and 3-4 tbsp sparkling water.

For the sauce: 500ml double cream, 200g smoked cheese, preferably Bavarian, grated, plus extra for topping, 100g speck (or other cured ham), finely chopped, salt and freshly ground black pepper, 2 tbsp olive oil and 1 onion, thinly sliced.
