Sally Bee Baked cod provençale recipe on Lorraine

Sally Bee served up a tasty and colourful Mediterranean baked cod provençale with garlic and rosemary crushed Jersey Royals on Lorraine.

The ingredients are: 2 x 150g cod fillets, skinless, 1 red pepper, deseeded and cut into quarters, 1 yellow pepper, deseeded and cut into quarters, 1 courgette, cut into large chunks, 120g cherry tomatoes, 30g pitted black olives, 4 shallots, peeled and quartered, 3 garlic cloves, peeled and sliced, 2 tbsp extra virgin olive oil, plus extra for drizzling, A handful of fresh dill, chopped, Freshly ground black pepper, to taste and Grated zest and juice of 2 unwaxed limes.

For the garlic and rosemary crushed Jersey Royals: 15 Jersey Royal potatoes, unpeeled, 2 tbsp olive oil, Sprinkle of sea salt flakes, 4 sprigs rosemary and 1 tsp garlic powder.
