Simon Rimmer Chinese Soy Eggs recipe on Sunday Brunch

Simon Rimmer served up tasty Chinese soy eggs served with sea salt and cracked black pepper on Sunday Brunch.

The ingredients are: 6 large eggs, 6 tbs warm water, 1 tbs sugar, 2 tbs sherry vinegar and 150ml soy.

For the sauce: 3 cloves garlic, 25mm piece grated ginger, 125ml white wine vinegar, 125g demarera sugar, 180ml water, 1 tbs cornflour and 2 red chillies.
