Ainsley Harriott jerk chicken with pineapple salsa recipe on This Morning

Ainsley Harriott serves up tasty spicy BBQ jerk chicken with spiked caramelised pineapple salsa on This Morning. Ainsley showed how he makes his own jerk seasoning from a simple recipe for this dish.

The ingredients are: 225g onions, quartered, 1-2 habaneros or scotch bonnet chillies, halved and seeded, 50g fresh root ginger, peeled and roughly chopped, 1/2 tsp ground allspice, the leaves from 15g fresh thyme sprigs, 1 tsp freshly ground black pepper, 120ml white wine vinegar and 120ml dark soy sauce and 4 chicken breasts (skin on).

For the chilli spiked pineapple salsa: 1 medium pineapple, 2 tablespoons caster sugar, 1 red chilli seeded and chopped, 1 inch of fresh ginger grated, Grated zest and juice of 2 limes, 1 red onion finely chopped, 1 tablespoon chopped fresh mint, 1 tablespoon chopped fresh coriander and Salt and freshly ground black pepper.
