Phil Vickery cooks steak and chips for a happy meal as voted for by the public to mark International Day of Happiness on This Morning.
The ingredients are: 250g or 9oz approx thick cut rib eye steak per person, 2 tbsp cooking oil, salt and freshly ground black pepper and 2 tbsp cornflour or arrowroot, if needed.
For the chips: 500g of potatoes King Edward, Maris Piper, Red Rooster, Wilja, Marfona, groundnut oil, safflower or sunflower oil, salt and vinegar.
For the tomato & onion salad: 4 large ripe plum or vine tomatoes, at room temperature, ½ red onion, very finely sliced, few rocket leaves (optional) and 1 tbsp chopped fresh tarragon (optional).
For the dressing: 2 tbsp vinegar, 1 heaped tsp Dijon mustard, 4 tbsp sunflower oil, 1 tbsp extra virgin olive oil (optional), salt and pepper and sugar.
To serve: purple sprouting broccoli.
