Si and Dave cooks honey glazed gammon for the festive season on Christmas Kitchen with James Martin.
The Bikers says: “This stunning gammon joint glazed with fruity marmalade and sticky honey is great for feeding a crowd.”
The ingredients for the gammon: 6kg gammon joint, fresh orange juice, to cover, water, to cover, 8 cloves, plus extra for studding the gammon, 2 onions, peeled, halved and 4 large bay leaves.
For the glaze: 120g soft brown sugar, 3 oranges, zest of three, juice of two, 3 tbsp clear honey, 3 heaped tbsp orange marmalade and 3 tbsp wholegrain mustard.
To serve: apple compote and pickled red cabbage.
