Jamie Oliver Massaman curry recipe with turkey and butternut squash inspired Thai cook Khun Saiyuud Diwong on Jamie’s Cracking Christmas

Jamie Oliver serves up a tasty Massaman curry with leftover turkey and butternut squash inspired Thai cook Khun Saiyuud Diwong on Jamie’s Cracking Christmas.

Jamie says: “This is an astonishingly beautiful, floral curry that you must try! I was taught to make it by the fantastic Thai cook Khun Saiyuud Diwong who runs a great cooking school and is actively involved with the Helping Hands project in the largest slum in Bangkok – look her up, she’s an inspirational woman.”

The ingredients for the curry are: 2 large onion squash, (1.2kg), olive oil, 150 g shelled unsalted peanuts, 4 fresh bay leaves, 1 large onion, 500 g baby new potatoes, 2 x 400 g tins of light coconut milk, 4 tablespoons palm sugar, 2 tablespoons tamarind paste, 2 tablespoons fish sauce, 350 g silken tofu and 400 g sugar snap peas.
