Stevie Parle and Emma Grazette cooks jerk spiced pork with sweet potato salad in Granada on The Spice Trip.
The ingredients are: 4 x 150g pork chops and Lime wedges, to serve.
For the marinade: 1 tbsp allspice berries, 1 tbsp black peppercorns, ½ tsp ground cinnamon, ½ nutmeg, freshly grated, ¼ bunch of thyme, leaves picked, 5 spring onions, roughly chopped, 3 garlic cloves, roughly chopped, 1 scotch bonnet chilli, seeded and roughly chopped, 1 tbsp dark brown sugar, 2 tbsp dark soy sauce, Juice of 1 lime and Sea salt.
For the sweet potato salad: 4 sweet potatoes, halved, 4 thyme sprigs, Sea salt and freshly ground black pepper, ¼ red onion, roughly chopped, 1 large tomato, roughly chopped, Small bunch of coriander, leaves picked and roughly chopped, Small bunch of parsley, leaves picked and roughly chopped, 1 lime and Nutmeg, grated to taste.
