Stevie Parle cooks nutmeg roast chicken with squash and spinach in Granada on The Spice Trip.
The ingredients are: 1 x 1.5kg chicken, deboned, ½ nutmeg, freshly grated, 2 onions, sliced into rings, 1 head of garlic, halved horizontally, 1 lemon, halved horizontally, ½ bunch of thyme, Olive oil, for drizzling and Sea salt and freshly ground black pepper.
For the squash and spinach: 1 butternut squash, peeled and cut into large chunks, Olive oil, 2 cinnamon sticks, Sea salt and freshly ground black pepper, 200g spinach, Good knob of butter, ¼ nutmeg, freshly grated and Plain yoghurt, for drizzling.
