Emma Grazette cooks grilled Lemon Sole with Mace and nutmegs on The Spice Trip in Grenada.
The ingredients are: 4 x 300g whole lemon sole, Pinch of flaked sea salt and 1 lemon, thinly sliced.
For the brown butter: 80g lightly salted butter, 2 blades mace, Good ½ tsp freshly grated nutmeg, Sprinkling of capers, Juice of 1 lemon, Sprinkling of freshly chopped parsley, Salt and freshly ground pepper, to taste.
