Black cabbage is a loose-leafed cabbage that is grown in Tuscany, Italy. The leaves are a very dark green, almost black, hence its name, which translates as ‘black cabbage’.
To flavour the polenta, John adds parmesan cheese, mascarpone cheese, butter and cream.
