Lisa Faulkner served up a tasty veggie cottage pie with a hash brown topping on Lorraine.
The ingredients are: 1 tbsp olive oil, 1 onion, finely chopped, 2 carrots, chopped, 2 sticks celery sliced, A handful of mushrooms chopped, 2 garlic cloves, grated, a few thyme sprigs, leaves stripped, 300ml vegetable stock, I generous tsp Marmite, I x 400g tin green lentils, drained and rinsed, I x 400g tin butter beans, plus the water, I tbsp ketchup, I tsp Dijon mustard, 4 – 6 frozen spinach cubes, 1 – 2 tsp vegetable gravy granules (optional), 12 hash browns, 75g grated cheddar cheese, salt and pepper.
