Gino showcase his chicken and mushroom open lasagna dish on Let’s Do Lunch.

The ingredients are: 200g 00 flour, 2 eggs, beaten, 1 tbsp olive oil, Salt and pepper, Or 12 ready-made pasta sheets, 25g dried porcini mushrooms, soaked in boiling water, 2 tbsp olive oil, 1 banana shallot, finely sliced, 3 chicken breasts, skinned and diced, 400g of mixed mushrooms, larger ones divided, 1 tbsp thyme leaves, 50ml white wine, 150ml double cream and 100g mascarpone.

For the parsley oil: 100ml olive oil, A small bunch of parsley leaves, block of parmesan, salt and pepper.
