Gino D’acampo makes his mamma’s Bolognese with roasted tomato sauce dish on Let’s Do Lunch.
The ingredients are: 2kg fresh ripe tomatoes, 2 cloves garlic, sliced, 3 tbsp olive oil, 4 tbsp olive oil, 1 onion, peeled and very finely chopped, 1 large carrot, peeled and grated, 2 celery sticks, very finely chopped, 500g minced beef, 500g minced pork, 2 glasses of dry red wine, 700ml roasted tomato sauce, 2 tbsp tomato puree, 200 ml chicken stock, Handful of basil leaves, Salt and pepper, to taste and 500g fresh fettuccine or tagliatelle.
Grated pecorino to serve.
