Amelia Christie-Miller served up a tasty butter bean puttanesca with anchovies, olives and capers to power up your midweek with beans on This Morning.
The ingredients are: 2 tablespoons olive oil, plus extra as needed, 6 anchovy fillets, 1 red onion, finely sliced, 2 garlic cloves, finely sliced, 70g pitted kalamata olives, half left whole, half sliced in half, 1 teaspoon dried chilli flakes, 50g capers, 400g can good-quality chopped tomatoes, ½ teaspoon white caster sugar or honey, 700g good-quality butter beans with their liquid and Large bunch of flat-leaf parsley (approximately 30g), roughly chopped.
Warm focaccia or ciabatta bread, to serve.
