Simon Rimmer White Chocolate and Dulce De Leche Eclairs recipe on Sunday Brunch

Simon Rimmer served up delicious White Chocolate and Dulce De Leche Eclairs on Sunday Brunch.

The ingredients are: 60g butter, 180ml water, 4 eggs, 225g flour, 400g of whipped double cream, 180g grated white chocolate, 1 teaspoon vanilla and 600g dulce de leche.

For the topping: 100ml cream, 1 tablespoon light brown sugar, 1 teaspoon vanilla, 100g milk chocolate and 25g butter.
