Si and Dave’s lamb and caper pie recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a tasty lamb and caper pie on The Hairy Bikers Go West.

The ingredients for the pie filling and gravy are: 1kg lamb shoulder, trimmed of fat and diced, 1 tbsp plain flour, 1 tbsp mustard powder, 3–4 tbsp olive oil, 1 onion, finely chopped, 1 large carrot, peeled and finely chopped, 2 celery sticks, finely chopped, 100ml dry white wine, 1 large sprig fresh thyme, 2 bay leaves, 2 sprigs fresh rosemary, 300ml chicken stock, 1 large strip of pared lemon zest, 4 tbsp capers, drained, half roughly chopped and half left whole, salt and freshly ground black pepper.

For the pastry: 300g plain flour, plus extra for dusting, 75g butter, chilled and diced, 75g lard, chilled and diced (or another 75g butter) and 1 free-range egg, beaten.
