Simon Rimmer served up a delicious golden syrup pudding with salted caramel ice cream and pecan nuts on Sunday Brunch.

The ingredients are: 4 eggs, 55g sugar, 125g golden syrup, 125g butter, 1 teaspoon vanilla, 65g flour, 100g dessicated coconut, 300ml milk and 200ml evaporated milk.

Serve with more golden syrup and slated caramel ice cream.
